Mango Fire Cheddar Burgers
INGREDIENTS
Minty Mango and Cilantro Salsa
1 cup fresh mango, seeded, peeled and diced 2 tsp jalapeno peppers, seeded and finely chopped
1 tbsp red onion, grated
1 tbsp fresh cilantro, chopped
1/2 tsp fresh mint, chopped
Buffalo Aioli
2 tbsp buffalo Red Hot sauce
1/2 cup mayonnaise
2 pounds ground chuck 80/20
3 tablespoons soy sauce (Kikkoman)
1/2 teaspoon ground pepper, freshly grated
1 cup Great Midwest Mango Fire Cheddar, shredded
6 hamburger buns, splitBibb lettuce
Buffalo Red Hot Sauce (for garnishing)
Prepare the grill for direct cooking over medium high
heat.
Add all the salsa ingredients in a small bowl and gently fold together. Cover and refrigerate until assembly.
In a small bowl, add the hot sauce and mayonnaise and mix well. Cover and refrigerate until assembly.
In a large bowl gently mix the chuck, soy sauce and pepper. Shape into 6 patties of equal size and thickness, make a small indentation in the center of each patty. Cover and refrigerate until ready to grill.
Brush the cooking grates clean. Grill the patties over
direct medium high heat, with the lid closed as much as possible, for 4-5
minutes each side. Turn the patties over only once. During the last minute of
cooking, place even amounts of cheese on each patty and place buns cut side
down and close lid. Remove from grill.
To assemble, add the aioli to all cut sides of buns. To each bun bottom, add some lettuce then a patty. Add equal amounts of the salsa then drizzle with some buffalo sauce. Add bun tops and enjoy!
