When you're looking for a healthy kid friendly snack, try these Pepperoni Pizza Zucchini Boats. These are an easy low carb, gluten free option when you want some pizza but not the calories. These are a great after school snack as well. You start with some fresh zucchini - small to medium size. (Larger is not always better when it comes to zucchini). The small zucchini has more flavor and less fibrous than the larger zucchini. Cut the ends off the zucchini, then cut in half lengthwise.
Then scoop out the seeds using a spoon or a melon baller. (Don't throw away the inside flesh. You can sauté that up with some garlic, mushrooms and onions as a great side dish for another meal.)
Drizzle the inside of the zucchini with oil, garlic, salt, pepper and parmesan. Then add pizza sauce, mozzarella cheese and pepperoni. Bake at 375 for 22-28 minutes or until fork tender.
To garnish, add some fresh basil. Enjoy!
Another option is to slice the zucchini into thin rounds and make pizza bites.

4 medium zucchini
2 tbsp olive oil
1 tsp garlic powder or 2 garlic cloves, minced or grated
Salt
Pepper
2 tbsp parmesan cheese
1 cup pizza sauce
1 cup shredded mozzarella cheese
1/4 cup pepperoni
2 tbsp fresh basil for garnishing
INSTRUCTIONS
Pre-heat oven to 375 degrees.
Cut the ends off the zucchini then cut the zucchini in
half lengthwise. Scoop out the seeds using a spoon or melon baller creating a
boat like appearance. Place on baking sheet.
Drizzle the zucchini with the oil, garlic powder, salt, pepper and parmesan. Next add the pizza sauce, mozzarella cheese then top with pepperoni. Bake for 22-28 minutes or until fork tender.
Garnish with fresh basil and enjoy!
