Buffalo Chicken Quinoa Bites

 
Here’s a great recipe to make for the next big game. If you made a New Year’s resolution to eat healthy and you don’t want to break that resolution on the day of the big game, make these quinoa bites. They’re delicious and taste just like buffalo chicken wings, but with less calories.

INGREDIENTS:

 Buffalo Bites-
1 cup cooked quinoa (I used red quinoa)
1/2 cooked chicken, shredded
1/3 cup Italian breadcrumbs
1/4 cup parmesan cheese
1 egg, beaten
3 tablespoons buffalo wing sauce
3 tablespoons feta cheese, crumbled
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
 
Topping-
1/4 cup buffalo wing sauce

Apricot Arugula (Optional Garnish)-
2 tablespoons apricot preserves
1 tablespoon rice wine vinegar
1/4 cup arugula

PREPARATION:

Pre-heat oven to 350 degrees. Spray a cookie sheet with non-stick cooking spray.
 
In a large bowl, add all of the buffalo bite ingredients and mix well until thoroughly combined. Using a teaspoon, scoop mixture and form into 1 ½ - 2 inch balls. Place the balls 1 inch apart on the cookie sheet. Bake in oven for 13-15 minutes, then drizzle the ¼ cup remaining buffalo wing sauce over the buffalo chicken quinoa bites. Put the bites back in the oven for 1-2 more minutes. Remove from heat and add to large plate.

In a small bowl, add the apricot preserves, vinegar and arugula. Toss the ingredients to combine and loosely chop the greens. Garnish the buffalo bites with the arugula mixture. Add toothpicks, if desired to serve.
