Tomorrow is National French Toast Day - November 28, 2015
Here is a great French Toast Casserole for you to make using your leftover Thanksgiving pies and rolls.
It's so easy to do, just take whatever pies and rolls that you have leftover from Thanksgiving dinner.
Whether you have some caramel apple pie or....
or some pumpkin pie.....
or even some rolls leftover, they all work as a great french toast base.
Just break apart the pie pieces and rolls and add to a casserole dish that has been lightly sprayed with a non-stick spray.
Here I added 4 pieces of pumpkin pie, 2 slices of caramel apple pie and 3 rolls.
Then I add eggs, 2 cups of half and half (I used 1 cup of half and half and 1 cup of almond milk because I ran out of half and half) along with some apple pie spices (cinnamon, allspice and nutmeg).
Whisk together.
Pour the milk mixture over the pies and rolls.
Then I add my apple pie butter,
along with some chopped pecans to the top of the casserole.
Bake at 375 degrees for 50-60 minutes, or until thoroughly cooked.
Drizzle on some maple syrup and fresh fruit. I added some of my leftover cranberry sauce to the top as well. So yummy!
Enjoy! This can be made up the night before and baked in the morning or you can simply make it and bake it right away. This doesn't have to sit overnight like some french toast casseroles because we are not using heavy slices of french bread that typically need to soak overnight. This is simple and DELICIOUS!
RECIPE:
INGREDIENTS -
1 whole leftover pie broken into pieces (you can use multiple types of pies and even add some rolls if you don't have enough pie left)
8 eggs
2 cups half and half
2 teaspoons apple pie spice (or a combo of cinnamon, allspice and nutmeg)
1 teaspoon vanilla extract
1/4 cup apple pie butter
3 tablespoons chopped pecans
1/4 cup maple syrup
Optional garnishing:
Fresh fruit
Cranberry sauce
PREPARATION -
Pre-heat oven to 375 degrees.
Lightly spray a casserole dish with a non-stick cooking spray. Add the pie and rolls to the bottom of the dish.
Whisk the eggs, milk and spices together and pour over the pie mixture.
Combine the apple pie butter and pecans and dollop small pieces all over the top of the egg mixture. Bake for 50-60 minutes or until eggs are completely cooked.
Drizzle with the maple syrup and garnish with fruit.
