MANGO TUSCAN FILET
MIGNON
With Avocado
Limoncello Compound Butter
INGREDIENTS-
Marinade-
2 large mangoes, de-seed, peeled and diced (or 15 ounce
can diced mangoes)
½ cup Kikkoman soy sauce
¼ cup red wine vinegar
2 tablespoons sherry cooking wine
3 large garlic cloves, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
½ teaspoon kosher salt
½ teaspoon black peppercorn, freshly cracked
4 – 8-ounce filet mignon steaks (about 1 ½ - 2 inches
thick)
Salt and pepper
Avocado Limoncello Compound Butter-
½ cup (1 stick) butter, softened
1 ripe avocado, peeled and de-seeded
1 large garlic clove
1 ounce limoncello (you can leave out if you don’t want
the alcohol)
Juice of 1 lemon
1 teaspoon ground cumin
1 tablespoon cilantro, chopped
1 tablespoon chives, chopped
½ teaspoon kosher salt
½ teaspoon black peppercorn, freshly cracked
Pinch of red pepper flakes
PREPARATION-
Add all the marinade ingredients together and pour over
the steaks, let sit for at least one hour at room temperature or up to 24 hours
covered in the refrigerator. (Bring to room temperature before grilling).
Add all compound butter ingredients to a food processor
and pulse to combine. Spoon onto parchment paper and form into a log and
refrigerate.
Remove steaks from marinade, then liberally sprinkle both
sides with salt and pepper. Set aside until ready to grill. Add the remaining
marinade to a large skillet and simmer on medium heat for 5 minutes, then turn
to low heat until thickened.
Pre-heat a grill for direct cooking over high heat. Add
steaks to grill for 5-7 minutes each side (for medium rare), depending on how
thick they are and how you want them done. Remove from grill and tent them with
aluminum foil to rest.
To plate, top each steak with a slice of compound butter
and then drizzle on some thickened mango sauce.
Note- This marinade is great for skirt steak or flank
steak too!
